The weather outside is FRIGHTFUL! Time to curl up with a cozy blanket and a mug of hot chocolate! Let's make it event better and top that hot chocolate with delicious and easy homemade honey marshmallows!

You will need:

  • 1-1/4 c water, divided
  • 3 Tbsp or 3 pkg gelatin (we used Knox brand)
  • 1 c honey
  • 1/4 tsp salt
  • 1 Tbsp vanilla paste
  • cooking spray to grease pan
  • corn starch or powdered sugar to dust mallows

Instructions:

  1. In mixing bowl, combine 3/4 c water and gelatin. Let bloom while cooking honey syrup.
  2. Combine remaining 1/2 c water, 1 c honey, and salt in medium sauce pan. Bring to boil.
  3. Continue cooking until temperature reads 240°F on candy thermometer.
  4. Turn mixer with bloomed gelatin on low. Pour boiling syrup into mixing bowl in a steady stream.
  5. Slowly rise the speed to high for 4-6 minutes.
  6. Stop mixture and add vanilla.
  7. Resume mixing on high for another 3-4 minutes. Mixing bowl should be cool to the touch. Mixture should double in volume, have a glossy appearance and soft peaks.

FOR PIPED MARSHMALLOWS:

  • Spoon into piping bag fitted with wide tip. 
  • Pipe dollops onto greased baking pan.
  • Allow to cool up to 4 hours on counter.
  • Dust mallows with cornstarch or powdered sugar.

FOR SQUARE MARSHMALLOWS:

  • Pour mixture into greased 9x9 pan. Allow to cool up to 4 hours on counter. 
  • Dust mallows with cornstarch or powdered sugar.
  • Oil pizza cutter or knife to cut cooked marshmallows in desired shapes.
