You will need
- 1 1/2 cups sugar
- 3/4 cup water
- 1 cup clover blossom honey
Instructions
- Mix the sugar and water together in a saucepan.
- Set heat to medium-high.
- Stir until the sugar dissolves (similar to making simple syrup).
- Once the mixture is boiling, turn off the heat, add honey, and stir until combined.
- Turn heat back on to medium-high and cook, stirring occasionally, for about 10 minutes or until a candy thermometer reads 300°F.
- Turn off the heat and let the mixture settle briefly.
- Carefully ladle the hot mixture into silicone candy or lollipop molds with sticks in place.
- Optional: Pour onto parchment paper in coin-sized circles and place a lollipop stick into each circle.
Safety note: Hot sugar can cause severe burns. Use caution and keep children and pets away from the stove.

- Let cool for 1 hour before removing from molds or parchment paper.
- Wrap in cellophane or parchment to share.
