
You will need:
- 1/3 c honey from The Honey Jar
- 1/2 c full fat coconut milk
- 1/8 tsp fine sea salt
- 1-1/2 c desiccated coconut
- 1/4 c almond flour
Instructions:
Heat up honey in a small pot on low heat. Allow it to simmer gently. When it starts to bubble, vigorously whisk in coconut milk. Simmer for about 3-4 minutes, stirring so it doesn't boil over.
Take off heat, stir in salt and desiccated coconut. Mix well, then stir in almond flour.

Allow mixture to cool for about 20 minutes. Using 1 oz scoop, portion out onto a parchment-lined baking sheet 2 inches apart. Bake at 325°F for 20 minutes until the cookies are toasted light brown.

Let cool completely before eating.
