Honey Cornbread Cookies

It's been a while since we had a good honey cookie recipe. But this cookie is not like other cookies. It's a delicious, melt-in-your mouth treat with a cornbread flavor twist! You can even adjust the sweetness and saltiness to suite your tastes once they're done baking!

YOU WILL NEED:

  • 1-1/3 c all-purpose flour
  • 3/4 c cornmeal
  • 2/3 c sugar
  • 1/4 c brown sugar
  • 1-1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 c cold butter, cubed
  • 1 large egg
  • 2 tsp vanilla
  • 1/4 c warmed honey, plus optional honey for drizzling
  • flaky sea salt (optional)

Instructions

Mix flour, cornmeal, sugar, brown sugar, baking soda, and salt together in a food processor with a few pulses to combine. Add cubed butter into processor. Pulse 6 or 7 times until mixture resembles wet sand. In a small bowl or measuring cup, whisk together warmed honey, vanilla, and egg. Add wet moisture to dry ingredients in food processor.

Process together until dough forms. Dough will be soft. Place 1 oz scoops of dough on a parchment-lined cookie sheet. Place in the fridge for at least 30 minutes or overnight to firm up the dough. Cover with plastic wrap if longer than 30 minutes.

Preheat oven to 350°F. Place 8 dough balls approximately 3" apart on a parchment-lined 11x14 cookie sheet. Bake for 12 minutes. 

Store baked cookies in an airtight container at room temperature for up to 3 days.

OPTIONAL- For additional flavor/saltiness/sweetness, sprinkle flaky sea salt on cookies as soon as they finish baking AND/OR drizzle honey on cookie before eating.
