Honey Bread & Butter Quick Pickles

Did you harvest too many cucumbers from your garden this year? Don't know what to do with them all? We've got the perfect recipe for you! These quick pickles (quickles) are easy to make, can be made with garden variety cucumbers, and stay good for up to 3 months in the fridge! Did I mention they're also super tasty??

YOU WILL NEED:

3 Pint Jars

Veggies

  • 4-5 cups sliced cucumbers in 1/4" rounds (garden variety, English, or Persian work well)
  • 1 large shallot, sliced
  • 2 cloves garlic, sliced

Brine

  • 1 c white vinegar
  • 1 c apple cider vinegar
  • 1 c clover honey
  • 1 Tbsp sea salt
  • 1 tsp mustard seed
  • 2 tsp celery seed
  • 1 tsp peppercorns
  • 1 Tbsp crushed red peppers (optional)

Instructions

In a non-corrosive pan (I used stainless steel), combine brine ingredients. If you don't like spice with your pickles, leave the red peppers out. Warm to a simmer until honey melts together with vinegar.

Divide veggies into each of your jars evenly.

Using a ladle, pour brine into each jar, filling to the top. Lid each jar.

Quickles keep in the fridge up to 3 months.
