INGREDIENTS
For the pancakes:
- 2 eggs
- 3/4 c cottage cheese
- 1 Tbsp. honey
- 1/2 tsp. vanilla extract
- 1/2 cup all-purpose flour
- 1/2 tbsp. baking powder
- 2 tsp. butter
- Cooking spray
For the Lemon Honey Syrup:
- ¼ Cup Honey
- ½ lemon, zest and juice
- Berries and fresh flowers to finish (optional)
INSTRUCTIONS

In a blender mix eggs, cottage cheese, honey, and vanilla.

In a blow, mix the flour and baking powder.

Pour the blended batter into the flour mixture and stir to combine.
- Heat a griddle or skillet over medium high heat. Spray with cooking spray and add a teaspoon of butter (optional).
- When hot, scoop the batter using an ice cream scoop (for same sized pancakes) onto the griddle or skillet. Cook over medium heat for about 2 minutes; flip when top is bubbly and edges are slightly dry. Cook an additional 2 minutes or until both sides are brown.
- If needed, keep the pancakes warm in a 200-degree F. oven while cooking remaining pancakes.
- To make the syrup, place the honey, lemon juice, and zest in a small bowl. Put in the microwave for 20 seconds. Stir and pour into a small pitcher.
- Serve the pancakes warm with the syrup, berries and fresh flowers (if using). Enjoy!
