Honey Garlic Shrimp for Two

INGREDIENTS

  •  cup low sodium soy sauce
  •  cup honey
  • 2 cloves garlic, finely minced
  • 2 tbsp fresh ginger, finely minced
  • 1 pound large shrimp, peeled and deveined
  • 2 tbsp cornstarch
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • Cooking spray
  • 1 teaspoon of olive or avocado oil
  • ½ tbsp sesame seeds, for garnish
  • 2 Green onions, sliced on the diagonal for garnish

INSTRUCTIONS

  1. In a small bowl, whisk all the sauce ingredients. Put to the side.
  2. Add all your shrimp to a bowl and add the salt, pepper and cornstarch and toss to coat.
  3. Spray a medium skillet over medium-high heat with cooking spray and add the oil and heat. Add the shrimp to the skillet. Cook until crispy on both sides, about 2 minutes on each side. Remove the shrimp from the skillet.
  4. Add the sauce to the skillet and bring to a low simmer to thicken.
  5. Once thickened, add the shrimp back in. Toss to coat in sauce then remove from heat.
  6. Garnish with the sesame seeds and green onion and serve over brown rice with a veggie of your choice.
